- 1 medium head green cabbage (2–2.5 lbs)
- 3 large carrots, peeled and grated
- 1 small yellow onion, finely diced
- 1 cup high-quality mayonnaise
- 1/2 cup full-fat sour cream
- 2 tablespoons apple cider vinegar
- 1/2 cup thick, smoky BBQ sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 stalks celery, thinly sliced (optional)
Instructions
- Prep the vegetables: Core and shred the cabbage using a food processor or knife, then grate the carrots. Place both in a large mixing bowl.
- Dice the onion finely and add it to the bowl with the cabbage and carrots. Add sliced celery if using.
- Make the dressing: In a separate medium bowl, whisk together mayonnaise, sour cream, apple cider vinegar, BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and pepper until smooth and emulsified.
- Combine and toss: Pour the dressing over the vegetables and toss thoroughly until all shreds are evenly coated.
- Chill and set: Cover the bowl or transfer to an airtight container. Refrigerate for at least 1 hour, ideally 4-24 hours, to allow flavors to meld.
- Final toss and serve: Stir the slaw well before serving. If it has thickened in the fridge, add a splash of water or vinegar to loosen. Taste and adjust seasoning if needed.
Notes
For best results, make this slaw at least 24 hours in advance to allow flavors to meld. Do not salt the cabbage early as it draws out water and makes the slaw soggy. If the slaw becomes too thick after chilling, add a teaspoon of water at a time to reach desired consistency. Do not freeze, as the cabbage will become watery upon thawing.
