A sweet and savory roasted salmon dish featuring a bourbon-peach glaze, perfect for meal prep and weeknight dinners.

- 4 salmon fillets (about 6 ounces each, skin-on or skinless)
- 2 large ripe peaches, sliced into thin wedges
- 1/4 cup bourbon
- 2 tablespoons soy sauce (or low-sodium/tamari)
- 1 tablespoon pure maple syrup
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon black pepper, freshly cracked
- Salt, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pat salmon fillets dry with paper towels and season lightly with salt and black pepper.
- Place salmon on a parchment-lined rimmed baking sheet, skin-side down.
- In a small bowl, whisk together bourbon, soy sauce, maple syrup, garlic, ginger, and red pepper flakes.
- Arrange peach slices around the salmon on the baking sheet.
- Roast for 10 minutes.
- Remove from oven, brush half the glaze over the salmon, and drizzle remaining glaze over peaches.
- Return to oven and roast for another 5-7 minutes until salmon flakes easily and reaches desired internal temperature.
- Let rest for 2-3 minutes before serving.
Notes
Pat salmon dry before seasoning to help glaze stick. Use a smooth, medium-bodied bourbon like Maker’s Mark. Salmon continues to cook after removal from oven; pull when just barely opaque. Can be eaten cold or reheated gently.
