Description
A quick and fun twist on traditional pancakes, these breakfast taco hybrids are made by cooking batter directly onto tortillas. They offer the comfort of fluffy pancakes with the handheld convenience of a taco, ready in under 15 minutes.
Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 pinch salt
- 2 large eggs
- 3/4 cup milk (whole milk or dairy-free alternative)
- 3 tablespoons melted butter (or neutral oil)
- 1 teaspoon vanilla extract
- 6–8 medium flour tortillas (6 inches)
- Maple syrup for serving
- Optional fillings: fresh berries, banana slices, chocolate chips, spinach, feta cheese, cooked bacon
Instructions
- In a medium bowl, whisk together 1 cup of flour, 2 teaspoons of baking powder, and a pinch of salt until no lumps remain.
- In a separate bowl, whisk 2 eggs until beaten. Add 3/4 cup milk, 3 tablespoons melted butter, and 1 teaspoon vanilla extract. Mix until smooth.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; do not overmix. Let the batter rest for 5 minutes.
- Heat a non-stick skillet over medium heat and grease lightly with butter or oil.
- Place one flour tortilla flat in the center of the hot pan and let it warm for 30 seconds.
- Pour about 1/4 cup of batter onto the center of the tortilla and spread it evenly toward the edges, leaving a small border.
- Cook for 2-3 minutes until bubbles form on the surface and edges look set.
- Gently flip the taco and cook for another 1-2 minutes until golden brown. Remove from pan.
- Repeat with remaining batter and tortillas, greasing the pan lightly between batches.
- While warm, place chosen fillings on one half of the taco, fold in half, and serve immediately with maple syrup.
Notes
Do not overmix the batter to ensure fluffy texture. Let the batter rest for 5 minutes to hydrate the flour. Use medium heat to prevent burning the outside before the inside cooks. If using gluten-free flour, ensure baking powder is also gluten-free. For savory options, skip vanilla and add spinach, feta, and bacon.
