  • 1.5 cups sharp cheddar cheese, shredded from a block
  • 3 stalks green onions, chopped
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. Shred the rotisserie chicken, removing any skin or bones, and place it in a large mixing bowl.
  2. Cut the cream cheese into small cubes and let it sit at room temperature for 30 minutes or microwave in 10-second bursts until soft.
  3. Add the softened cream cheese, BBQ sauce, garlic powder, and cayenne pepper to the bowl with the chicken.
  4. Mix on low speed or with a sturdy spoon until the cream cheese is mostly broken down and incorporated, taking care not to whip too much air into the mixture.
  5. Fold in the shredded cheddar cheese and chopped green onions using a spatula.
  6. Transfer the mixture to a 9×9 inch baking dish or slow cooker, smoothing the top with a spoon.
