- 8 oz full-fat cream cheese, softened
- 1 cup powdered sugar
- 1–2 tablespoons heavy cream
- 1 teaspoon vanilla extract (for frosting)
- 1 pint strawberries, sliced thinly
- 1 cup blueberries
- 1 cup raspberries
- 2 tablespoons apricot jam (optional, for glaze)
Instructions
- Preheat oven to 375°F (190°C). Line a 12-inch pizza pan or large baking sheet with parchment paper.
- In a large bowl, beat softened butter and granulated sugar on medium-high speed for 3-4 minutes until pale and fluffy. Scrape down sides.
- Beat in eggs one at a time, then add vanilla extract. Mix until combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture on low speed. Mix just until flour disappears.
- Place dough on prepared baking sheet. Press and roll into a 12-inch circle, about 1/4 inch thick.
- Bake for 12-15 minutes until edges are lightly golden. Remove and let cool completely on a wire rack (about 30 minutes).
- While cookie cools, beat cream cheese and powdered sugar until smooth. Add heavy cream and vanilla, beat until fluffy and spreadable.
- Spread cream cheese frosting evenly over the completely cooled cookie base.
- Arrange sliced strawberries, blueberries, and raspberries over the frosting.
- Optional: Warm apricot jam and brush lightly over fruit for a glossy finish.
Notes
Ensure the cookie base is completely cool before frosting to prevent the cream cheese from melting. For meal prep, assemble the base and frosting ahead of time, but add the fruit just before serving to prevent sogginess. Store in the refrigerator for up to 3 days.
