Ingredients
- Lamb chops (rib or loin, approx. 1-inch thick)
- Fresh garlic (4-5 cloves, minced)
- Heavy cream (at least 35% fat)
- Unsalted butter
- Chicken broth (low-sodium)
- Dijon mustard
- Fresh thyme
- Fresh parsley
- Neutral oil (avocado or grapeseed)
- Kosher salt
- Freshly cracked black pepper
Instructions
- Pat lamb chops dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 10 minutes.
- Heat a large skillet (preferably cast-iron) over medium-high heat with neutral oil until shimmering.
- Sear lamb chops for 3-4 minutes per side until golden brown and internal temperature reaches 130°F (54°C) for medium-rare. Remove to a plate and tent with foil.
- Reduce heat to medium. Add butter to the pan. Once melted, add minced garlic and cook for 30-60 seconds until fragrant but not browned.
- Pour in chicken broth and Dijon mustard, simmering for 1 minute to reduce slightly.
- Reduce heat to low. Slowly pour in heavy cream, stirring constantly. Simmer gently for 2-3 minutes until the sauce coats the back of a spoon.
- Stir in fresh thyme and half of the parsley. Taste and adjust seasoning.
- Return lamb chops to the pan with any accumulated juices. Spoon sauce over chops, garnish with remaining parsley, and serve immediately.
Notes
Do not overcrowd the pan when searing lamb to ensure a good crust. Garlic burns easily, so keep heat at medium and stir constantly when adding it. Let the lamb rest for 5 minutes after cooking to redistribute juices. For a lighter option, substitute half the cream with coconut milk or Greek yogurt (add yogurt off heat to prevent curdling).
