- 1 can (13.5 oz) full-fat coconut milk
- 1 tablespoon fresh lime juice
- 1–2 tablespoons honey or agave (optional)
- 1 cup ice cubes (if using fresh pineapple)
- 1/4 cup coconut water (optional)
Instructions
- Prep the fruit: If using fresh pineapple, peel, core, and chop into 1-inch chunks. If using frozen, let sit for 5 minutes to soften slightly.
- Combine ingredients: Add pineapple chunks, coconut milk, coconut water (if using), lime juice, and sweetener to a blender.
- Blend until smooth: Blend on low, then increase to high for 45-60 seconds until the mixture is smooth and creamy.
- Taste and adjust: Taste the mocktail and adjust sweetness with more sweetener or tartness with more lime juice. Thin with water or coconut water if too thick.
- Serve or store: Serve immediately over fresh ice with garnishes, or pour into airtight glass jars for storage in the fridge for up to 3 days.
Notes
Separation is natural for coconut milk; shake well before drinking. For a thicker consistency, use frozen pineapple instead of ice. Ensure pineapple is packed in juice, not syrup, if using canned.
