Ingredients
- Russet Potatoes (large, firm)

Instructions
- Wash and scrub the russet potatoes thoroughly. Peel or leave skin on as preferred.
- Cut potatoes into even sticks or wedges, approximately half-inch thick, to ensure uniform cooking.
- Soak the cut potatoes in a large bowl of cold water for at least 30 minutes to remove excess starch.
- Drain the potatoes and rinse with cold water. Pat them completely dry with kitchen paper towels.
- In a dry bowl, toss the dry potatoes with avocado oil and cornstarch (if using) until lightly coated.
- Add sea salt and black pepper, tossing to ensure even seasoning.
- Preheat the air fryer to 380°F (190°C) for 3-5 minutes.
- Arrange potatoes in the air fryer basket in a single layer, ensuring they are not overcrowded.
- Cook for 15 minutes, shaking the basket halfway through to ensure even browning.
- Check for crispiness; if needed, cook for an additional 2-3 minutes until golden brown.
Notes
Ensure potatoes are bone dry before adding oil to achieve maximum crispiness. Do not overcrowd the basket; cook in batches if necessary. Season immediately after cooking for better salt adhesion. For leftovers, reheat in the air fryer at 380°F for 3-4 minutes to restore crunch.
