- 8 to 10 medium jalapeno peppers
- 8 ounces cream cheese, softened to room temperature
- 1 cup sharp cheddar cheese, freshly shredded
- 1 pound thick-cut bacon
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper, freshly ground
- 1/2 teaspoon salt
- Toothpicks for securing
Instructions
- Preheat oven to 400°F (200°C).
- Wash and dry jalapenos. Slice each pepper in half lengthwise, being careful not to cut through the stem.
- Remove seeds and white membranes using a spoon or knife tip. Leave seeds for more heat or remove all for mild poppers.
- In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, black pepper, and salt. Mix until smooth.
- Fill each jalapeno half tightly with the cheese mixture.
- Cut bacon slices in half crosswise. Wrap one half-slice around each filled jalapeno half and secure with a toothpick.
- Place poppers on a parchment-lined baking sheet, leaving space between them.
- Bake for 20-25 minutes until bacon is crispy and golden brown.
- Cool for 5 minutes before removing toothpicks and serving.

Wear gloves when handling jalapenos to avoid skin irritation. Ensure cream cheese is at room temperature for a smooth filling. For extra crispiness, broil for the last 1-2 minutes while watching closely. Can be made ahead and refrigerated for up to 24 hours before baking.
