Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Crack eggs into the dry mixture and whisk lightly to create a moist, sandy texture. Add a splash of milk or water if too dry, or more panko if too wet.
- Add the cabbage strips to the bowl and toss by hand until every piece is evenly coated in the breadcrumb mixture.
- Drizzle olive oil or avocado oil over the coated cabbage and toss again to distribute.
- Spread the cabbage out in a single layer on the prepared baking sheet, ensuring pieces are not touching to allow for air circulation.
- Bake for 15 minutes, then remove from the oven and flip each piece of cabbage.
- Return to the oven and bake for another 10-15 minutes, or until edges are crispy and golden brown.
- Remove from oven and let cool for a few minutes before serving or storing.
Notes
Do not overcrowd the pan to prevent steaming. Flipping halfway through is essential for even crispiness. For extra crunch, use a wire rack on the baking sheet. If breadcrumbs brown too quickly, lower oven temperature to 375°F (190°C).
