  • 3 tablespoons honey
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil or avocado oil
  • Corn tortillas
  • Red cabbage, finely shredded
  • Fresh cilantro, chopped
  • Avocado or guacamole

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. In a shallow bowl, combine cornstarch, smoked paprika, garlic powder, onion powder, and cayenne pepper.
  3. Dredge the shrimp in the dry mixture, ensuring a light, even coating. Shake off excess.
  4. In a small bowl, whisk together honey, adobo sauce, and lime juice to make the sauce.
  5. Heat oil in a large skillet over medium-high heat until it shimmers.
  6. Cook the shrimp in a single layer for 2-3 minutes per side until golden brown and opaque. Remove from pan.
  7. Return shrimp to the skillet over low heat, pour the sauce over them, and toss gently for 30 seconds to coat and thicken.
  8. Warm corn tortillas in the skillet for 30 seconds per side.
  9. Assemble tacos by placing shrimp on tortillas, topped with shredded cabbage, cilantro, and avocado.

Notes

Ensure shrimp are completely dry before coating to achieve maximum crispiness. Do not overcrowd the pan when frying. If using frozen shrimp, thaw completely and pat dry. For a lighter option, shrimp can be air-fried at 400°F for 6-8 minutes. Store components separately in the fridge for up to 3 days to maintain texture.
