- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 0.5 teaspoon smoked paprika
- Kosher salt and freshly cracked black pepper to taste

Instructions
- Prepare the filling: In a large mixing bowl, combine softened cream cheese, diced jalapeños, shredded Pepper Jack, cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined and thick.
- Set up your station: Lay out egg roll wrappers. Fill a small bowl with water or beaten egg for sealing. Place a large plate nearby for rolled egg rolls.
- Roll the egg rolls: Place a wrapper in a diamond shape. Spoon about 2 tablespoons of filling into the center. Fold the bottom corner up, then fold in the left and right corners. Roll tightly toward the top corner and brush with egg wash to seal. Press down to remove air pockets.
- Repeat: Continue rolling until all filling is used, yielding approximately 12-15 egg rolls. Place them on the plate without touching.
- Cook the egg rolls: Option 1 (Frying): Heat oil to 350°F (175°C) and fry in batches for 3-4 minutes until golden brown. Drain on paper towels. Option 2 (Air Frying): Preheat to 375°F (190°C), spray egg rolls with oil, and cook for 10-12 minutes, flipping halfway. Option 3 (Baking): Bake at 400°F (200°C) for 15-20 minutes.
- Check for doneness: Ensure wrappers are golden and crispy, and cheese is melted. Let cool for a few minutes before serving.
Notes
Wear gloves when handling jalapeños. Do not overfill the egg rolls to prevent bursting. For extra crispiness, double fry. These freeze well before or after cooking. Reheat in an air fryer to maintain crispiness; avoid microwaving if possible.
