Description
A quick and flavorful 30-minute dinner featuring thick-cut pork chops seared in bacon fat and glazed with a sweet and tangy mixture of maple syrup, Dijon mustard, and apple cider vinegar.
Ingredients
- Thick-cut bone-in pork chops (1 to 1.5 inches thick)
- Thick-cut bacon
- Unsalted butter
- Fresh garlic cloves, minced
- Real maple syrup (Grade B preferred)
- Dijon mustard
- Apple cider vinegar
- Freshly cracked black pepper
- Kosher salt
Instructions
- Pat pork chops dry with paper towels and season both sides generously with kosher salt and black pepper.
- Place a heavy-bottomed skillet over medium heat and cook bacon until crispy but not burnt. Remove bacon and set aside on a paper towel-lined plate, leaving the rendered fat in the pan.
- Increase heat to medium-high. Add pork chops to the hot bacon fat and sear for 3-4 minutes on one side until golden brown. Flip and sear the other side for another 3-4 minutes.
- Reduce heat to medium. Add butter and minced garlic to the pan, swirling for 30 seconds until fragrant without burning.
- In a small bowl, whisk together maple syrup, Dijon mustard, and apple cider vinegar. Pour this mixture into the pan around the chops and let it bubble and thicken slightly.
- Spoon the glaze over the chops and continue cooking for 2-3 more minutes until the internal temperature reaches 145°F (63°C).
- Remove chops from the pan and let them rest for 5 minutes. Crumble the crispy bacon over the top and serve with the pan sauce drizzled over everything.
Notes
Do not skip resting the meat to retain juices. Maple syrup burns easily, so keep heat at medium or lower when adding the glaze. Use a meat thermometer to ensure pork reaches 145°F. Boneless chops can be used but require reduced cooking time.
