  • ½ cup cornstarch

  • 3 cloves garlic, minced
  • 1 tsp toasted sesame oil
  • 2 tbsp vegetable oil
  • 2 cups broccoli florets
  • 2 stalks green onions, sliced
  • 1 tbsp toasted sesame seeds
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts completely dry with paper towels and slice into 1-inch cubes. Place in a large bowl and season with salt and pepper.
  2. Add cornstarch to the chicken and toss until every piece is lightly coated in a thin layer.
  3. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, and minced ginger until the sugar dissolves.
  4. Heat vegetable oil in a large wok or skillet over medium-high heat until the oil shimmers.
  5. Add chicken in a single layer (cook in batches if necessary to avoid crowding). Cook for 3-4 minutes without moving to develop a golden crust, then flip and cook for another 2-3 minutes until crispy and cooked through. Remove and set aside.
  6. In the same pan, stir-fry broccoli for 2 minutes, adding a splash of water if dry, until tender-crisp.
  7. Return the chicken to the pan and pour the sauce over everything. Toss quickly to coat; the sauce will thicken in about 30 seconds.
  8. Remove from heat, drizzle with sesame oil, and garnish with green onions and sesame seeds. Serve immediately over rice.

Notes

Ensure chicken is completely dry before coating to achieve crispiness. Do not overcrowd the pan when frying chicken, as this causes steaming instead of crisping. For a gluten-free version, substitute soy sauce with tamari. The dish reheats well in a skillet to maintain texture.
