Description

  • 1.5 lbs thinly sliced sirloin or ribeye steak
  • 12 oz uncooked penne or rigatoni pasta
  • 1 large yellow onion, sliced thinly
  • 1 green bell pepper, sliced thinly
  • 2 cups beef broth (low-sodium)
  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded provolone cheese
  • 1 cup sliced mushrooms (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Slice the onion, bell pepper, and mushrooms (if using) into thin strips.
  2. Place the sliced steak at the bottom of a 6-quart slow cooker.
  3. Pour the beef broth over the steak.
  4. Add the sliced onions, peppers, and mushrooms on top of the steak.
  5. Sprinkle garlic powder, onion powder, and dried parsley over the ingredients.
  6. Gently stir to distribute seasonings.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  8. About 30-45 minutes before serving, stir in the uncooked pasta, ensuring it is submerged in liquid. Add more broth or water if needed.
  9. Cover and continue cooking on high for 30-45 minutes, stirring occasionally, until pasta is tender.
  10. Turn off the heat and stir in the shredded cheddar and provolone cheese until melted and creamy.
  11. Season with salt and pepper to taste. Adjust consistency with milk or broth if necessary.
  12. Serve hot.

Notes

Add pasta only in the last 30-45 minutes to prevent mushiness. Use low-sodium broth to control salt levels. Grate cheese from a block for better melting. Pasta can be frozen for up to 3 months.
