Description
A creamy, garlic-herb mac and cheese made with Boursin cheese that is ready in under 20 minutes and holds up perfectly for meal prep throughout the week.

- 1 pound elbow macaroni or cavatappi
- 1 wedge (5.2 oz) Boursin Garlic & Herb Cheese
- 1 cup freshly grated sharp cheddar cheese
- 1 cup whole milk
- 1 tablespoon unsalted butter
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 cup reserved starchy pasta water
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve one cup of starchy pasta water before draining.
- In a large skillet or saucepan over medium-low heat, melt the butter. Pour in the milk and heat until steaming, whisking gently.
- Add the wedge of Boursin cheese to the warm milk and stir continuously until completely melted and smooth.
- Stir in the grated sharp cheddar cheese until fully incorporated and the sauce is thick and glossy. Add a splash of pasta water if too thick.
- Add the drained pasta to the skillet and toss until every noodle is coated. Adjust consistency with more pasta water if needed.
- Season with black pepper and smoked paprika to taste. Serve immediately or cool for meal prep storage.
Notes
Ensure cheese is at room temperature to prevent seizing. Do not overcook the pasta. Keep heat low when melting cheese to avoid separation. For meal prep, cool completely before storing to prevent condensation. Reheat with a splash of milk or water.
