Easy Cinnamon Roll Monkey Bread Bake: One Cook, 5 Lunches

  • Author: maria_scott
  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Description

A versatile, meal-prep-friendly cinnamon roll monkey bread made with refrigerated biscuit dough. Designed to be baked once and enjoyed as lunches throughout the week, this recipe offers a gooey, cinnamon-sugar treat with a cream cheese glaze.

Ingredients

Scale
  • 2 cans (16.3 oz each) large flaky refrigerated biscuit dough
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup dark brown sugar, packed
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1/2 cup confectioners’ sugar, sifted
  • 2–3 tablespoons milk (whole or almond)

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a 9-inch bundt pan with butter or non-stick spray.
  2. Open biscuit cans and separate biscuits. Cut each biscuit into quarters (or leave whole if small) and place in a large mixing bowl.
  3. Melt the butter in a microwave-safe bowl or saucepan. Stir in vanilla extract and set aside to cool slightly.
  4. In a separate large bowl, whisk together granulated sugar, dark brown sugar, and ground cinnamon.
  5. Pour the melted butter mixture over the cut biscuits and toss gently to coat. Sprinkle half of the cinnamon-sugar mixture over the biscuits and toss again. Repeat with the remaining cinnamon-sugar mixture until all pieces are coated.
  6. Arrange the coated biscuit pieces into the greased bundt pan, pressing them down gently to fill gaps and ensure tight packing.
  7. Bake for 45 to 50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Cover loosely with foil if browning too quickly.
  8. Let the bread cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.
  9. While the bread cools, whisk together softened cream cheese, confectioners’ sugar, and milk until a smooth, drizzling consistency is reached.
  10. Drizzle the cream cheese glaze over the completely cooled monkey bread. Slice into wedges and serve.

Notes

Ensure the pan is thoroughly greased to prevent sticking due to high sugar content. Cool the bread completely before glazing to ensure the glaze adheres properly. For meal prep, store in an airtight container in the refrigerator for up to 5 days. Flavors meld best by day three.
