- 1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
- 1 cup jasmine or short-grain white rice
- 1/4 cup pure honey
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar or apple cider vinegar
- 1 teaspoon minced garlic
- 1/2 teaspoon grated fresh ginger
- Pinch of red pepper flakes
- 1 tablespoon cooking oil
- Salt and black pepper to taste
- 1 teaspoon sesame oil
- Sliced green onions for garnish
- Sesame seeds for garnish
Instructions
- Rinse rice under cold water until water runs clear. Cook rice according to package instructions and set aside.
- Pat chicken pieces dry with a paper towel and toss with a pinch of salt and black pepper.
- In a small bowl, whisk together honey, soy sauce, vinegar, garlic, ginger, and red pepper flakes until honey is dissolved.
- Heat oil in a large skillet over medium-high heat. Sear chicken in a single layer for 3-4 minutes per side until golden brown and cooked through. Remove chicken and set aside.
- Reduce heat to medium. Pour sauce mixture into the same pan and simmer for 2-3 minutes until it thickens slightly.
- Return chicken to the pan and toss to coat evenly. Cook for 1-2 minutes to meld flavors.
- Fluff rice and divide among bowls. Top with saucy chicken, drizzle with sesame oil, and garnish with green onions and sesame seeds.
Notes
Pat chicken dry before searing to ensure browning. Keep heat at medium when reducing sauce to prevent burning. For meal prep, store sauce and chicken separately from rice to prevent sogginess. Can substitute soy sauce with tamari for gluten-free version.
