  • Author: maria_scott

  • Yield: 12 servings 1x

Description

These no-yeast cinnamon rolls use a cake-like batter method for incredible fluffiness and convenience. Perfect for meal prep and crowds, they require no kneading or rising time, making them a quick and delicious breakfast solution.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup whole milk, room temperature
  • 1 large egg, room temperature
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened (for filling)
  • 3/4 cup brown sugar, packed
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup powdered sugar (for glaze)
  • 2–3 tablespoons milk or cream (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish generously with butter or non-stick spray.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt until no lumps remain.
  3. In a separate medium bowl, whisk milk, egg, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Stir gently with a spatula just until combined. Do not overmix.
  5. Pour batter into the prepared baking dish and spread evenly into corners to an inch thick.
  6. Mix brown sugar, cinnamon, and nutmeg in a small bowl. Spread softened butter evenly over the batter, then sprinkle the cinnamon-sugar mixture generously over the butter.
  7. Bake for 30-35 minutes, or until tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool for 10 minutes. Whisk powdered sugar, milk, vanilla, and salt for the glaze. Drizzle over warm rolls and serve immediately.

Notes

Ensure baking powder is fresh for proper rise. Do not overmix the batter to keep rolls tender. If using a dark metal pan, reduce oven temperature by 25°F. Rolls can be made ahead: prepare batter, refrigerate overnight, add filling and bake in the morning (add 2-3 minutes to bake time).
