Fluffy Tropical Mango Muffins: 5-Ingredient Meal Prep

  • Author: maria_scott
  • Total Time: 35-40 minutes
  • Yield: 12 servings 1x

Description

These light, airy muffins are made with just five simple ingredients and are perfect for meal prep. They stay moist for days and freeze beautifully, making them an ideal grab-and-go breakfast or snack.

Ingredients

Scale
  • 2 cups (250g) All-Purpose Flour
  • 3/4 cup (150g) Granulated Sugar
  • 2 large Eggs, room temperature
  • 1/2 cup (120ml) Neutral Oil (e.g., vegetable or light olive oil)
  • 1 large Ripe Mango, peeled and pureed (approx. 1 cup)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. If using fresh mango, blend peeled mango chunks until smooth to create 1 cup of puree. If using frozen, thaw and drain excess liquid before blending.
  4. In a large bowl, whisk eggs lightly. Add sugar, oil, vanilla extract, and mango puree. Whisk vigorously until the mixture is smooth and uniform.
  5. Pour the dry ingredients into the wet ingredients. Gently fold with a spatula until the flour just disappears; do not overmix. The batter should be thick and slightly lumpy.
  6. Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing.

Notes

Do not overmix the batter to ensure fluffy texture. Use ripe mangoes for maximum sweetness and flavor. Muffins can be stored in the fridge for up to 5 days or frozen for up to 3 months. For best results, cool completely before storing to prevent sogginess.
