  • 1 lb Jumbo Shrimp, peeled and deveined
  • 4 tbsp Unsalted Butter, divided
  • 4 cloves Fresh Garlic, minced
  • 1 can (20 oz) Pineapple Chunks, packed in juice
  • 4 Green Onions, sliced
  • 3 tbsp Soy Sauce (low-sodium)
  • 2 tbsp Pineapple Jam or Preserves
  • 1 tbsp Rice Vinegar
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Black Pepper, freshly cracked
  • Salt, to taste

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. In a small bowl, whisk together soy sauce, rice vinegar, pineapple jam, and red pepper flakes until smooth.
  3. Heat a large skillet over medium-high heat and add half the butter. Once foaming, add shrimp in a single layer and sear for 1-2 minutes per side until golden. Remove to a plate.
  4. Add remaining butter to the pan. Add minced garlic and white parts of green onions; sauté for 30 seconds until fragrant.
  5. Pour in the sauce mixture and let it bubble and thicken for 2 minutes.
  6. Add drained pineapple chunks and cooked shrimp back to the pan. Toss gently to coat.
  7. Cook for another minute to heat pineapple through. Garnish with green onion tops and serve immediately.

Notes

Ensure shrimp are completely dry before searing to prevent steaming. Do not overcrowd the pan; cook in batches if necessary. The dish improves in flavor after 24-48 hours in the refrigerator. For a gluten-free version, use tamari instead of soy sauce.
