Description

  • 1 lb large shrimp (16/20 count), peeled and deveined
  • 4–5 cloves fresh garlic, finely minced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cups broccoli florets, bite-sized
  • 1 red bell pepper, sliced into thin strips
  • 1 bunch asparagus, woody ends snapped off, cut into 2-inch pieces
  • 1/2 lemon, juiced
  • 1/4 tsp red pepper flakes
  • Sea salt and black pepper, to taste
  • 1/4 cup dry white wine (optional)

Instructions

  1. Thaw shrimp if frozen, rinse under cold water, and pat completely dry with paper towels. Season lightly with salt and pepper.
  2. Wash and chop broccoli, bell pepper, and asparagus into uniform pieces.
  3. Heat a large skillet over medium-high heat with olive oil. Add shrimp in a single layer and sear for 1-2 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. In the same pan, add 1 tbsp butter. Add broccoli and bell pepper, sautéing for 2-3 minutes. Add asparagus and cook for another 1-2 minutes until tender-crisp.
  5. Reduce heat to medium-low. Add minced garlic and red pepper flakes, stirring constantly for 30 seconds until fragrant without burning.
  6. Return shrimp to the pan. Toss to coat in the garlic butter sauce. Squeeze lemon juice over the top and adjust seasoning.
  7. Serve immediately over rice or quinoa, or cool completely for storage.

Notes

Ensure shrimp are completely dry before searing to prevent steaming. Do not overcrowd the pan. Add garlic last to prevent burning. For best meal prep results, store in airtight glass containers and reheat in a skillet to maintain texture.
