Ingredients

  • 2 lbs ground beef (80/20 blend)
  • 1 tbsp garlic powder
  • 1 tbsp coarse black pepper
  • 1 tsp onion powder
  • 1 tbsp kosher salt
  • 46 sturdy burger buns (brioche or potato rolls)
  • Cheese slices (American or cheddar)
  • Fresh lettuce
  • Sliced tomatoes
  • Pickles
  • Onions
  • Oil for grates

Instructions

  1. Light charcoal briquettes or preheat gas grill on high for 10-15 minutes until hot.
  2. In a large mixing bowl, combine ground beef, garlic powder, black pepper, onion powder, and kosher salt.
  3. Gently mix ingredients by hand just until combined; do not overmix.
  4. Divide meat into 4-6 equal portions (6-8 oz each).
  5. Form each portion into a ball, then gently flatten into a 3/4-inch thick patty.
  6. Make a slight indentation (thumbprint) in the center of each patty to prevent puffing.
  7. Clean grill grates and lightly oil them with a paper towel dipped in oil.
  8. Place patties on the hot grill. Do not move them for 3-4 minutes to develop a crust.
  9. Flip burgers using a spatula. Cook for another 3-4 minutes.
  10. Add cheese slices during the last minute of cooking and cover grill to melt.
  11. Check internal temperature: 135°F for medium-rare, 145°F for medium, or 160°F for well-done.
  12. Toast burger buns cut-side down on the grill for about 30 seconds.
  13. Remove burgers from grill and let rest for 2-3 minutes.
  14. Assemble burgers with buns, patties, and desired toppings. Serve immediately.

Notes

Keep the beef cold until forming patties to maintain fat structure. Do not press down on burgers while cooking to retain juices. Ensure patties are uniform in thickness for even cooking. Let burgers rest after grilling to redistribute juices.
