Grilled Pineapple Chicken Kabobs: Easy 15-Minute Dinner

  • Author: maria_scott
  • Total Time: 25 minutes
  • Yield: 4 servings

Description

Juicy chicken breast cubes marinated in a savory-sweet glaze and grilled with fresh pineapple, bell peppers, and onions for a quick, healthy, and flavorful summer meal.

Ingredients

  • Boneless, skinless chicken breasts (cut into 1-inch cubes)
  • Fresh pineapple (cut into chunks)
  • Red onion (quarter, cut into large squares)
  • Green bell pepper (cut into large squares)
  • Yellow bell pepper (cut into large squares)
  • Extra virgin olive oil
  • Soy sauce (lower-sodium recommended)
  • Fresh ginger (grated)
  • Garlic (minced, 2 cloves)
  • Honey (1 tablespoon)
  • Sesame oil (1 teaspoon)
  • Salt and black pepper (to taste)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Cut chicken breast into 1-inch cubes and pineapple, onions, and bell peppers into large squares of similar size.
  3. In a large bowl, whisk together olive oil, soy sauce, grated ginger, minced garlic, honey, sesame oil, salt, and black pepper to create the marinade.
  4. Add chicken cubes to the marinade, toss to coat, and let sit for at least 15 minutes (up to 2 hours in the fridge).
  5. Thread the skewers alternating between chicken, pineapple, bell peppers, and onion, leaving small spaces between pieces.
  6. Preheat grill to medium-high heat and clean the grates.
  7. Grill skewers for 4-5 minutes on the first side until grill marks appear, then flip and cook for another 4-5 minutes.
  8. Ensure chicken reaches an internal temperature of 165°F (74°C) and pineapple is caramelized.
  9. Remove from grill and let rest for 1-2 minutes before serving.

Notes

If using wooden skewers, soaking them is crucial to prevent burning. Do not overcrowd the grill to ensure proper charring. For a gluten-free version, substitute soy sauce with tamari. Fresh pineapple is preferred over canned for better texture.
