Ingredients
- 1 lb (450g) Ground Turkey (93% lean)
- 2 tbsp Avocado Oil or Sesame Oil
- 3 cloves Garlic, minced
- 1 tbsp Fresh Ginger, grated
- 1/4 cup (60ml) Low-Sodium Soy Sauce
- 1 tbsp Rice Vinegar
- 2 tbsp Honey
- 1/4 cup (60ml) Water
- 1 tsp Cornstarch mixed with 1 tsp water
- 2 cups cooked Steamed Rice (Jasmine or short-grain)
- 2 cups Broccoli Florets
- 1 medium Carrot, julienned
- 2 stalks Green Onions, sliced
- 1 tbsp Toasted Sesame Seeds
Instructions
- Cook rice according to package instructions. Wash, chop broccoli and carrots, and mince garlic and ginger.
- In a small bowl, whisk together soy sauce, rice vinegar, honey, water, and the cornstarch slurry. Set aside.
- Heat avocado oil in a large skillet over medium-high heat. Add ground turkey, breaking it up with a spatula. Cook for 5-7 minutes until browned and no longer pink. Drain excess liquid if necessary.
- Push turkey to the side of the pan. Add minced garlic and grated ginger to the empty space. Sauté for 30 seconds until fragrant, then stir into the turkey.
- Pour the teriyaki sauce mixture over the turkey. Stir to coat and simmer for 2-3 minutes until the sauce thickens into a glossy glaze.
- Add broccoli and carrots to the pan with a splash of water, cover, and steam for 3-4 minutes until tender-crisp.
- Place a scoop of rice in each bowl. Top with the teriyaki turkey and steamed veggies. Drizzle with remaining sauce.
- Garnish with sliced green onions and toasted sesame seeds. Serve immediately.
Notes
For a low-carb option, swap rice for cauliflower rice. For a vegan version, use firm tofu and maple syrup. If the sauce is too thick, add a splash of water; if too thin, cook longer. Use low-sodium soy sauce to control saltiness. Fresh ginger and garlic provide better flavor than bottled versions.
