Description

Ingredients

  • 1 lb (450g) Ground Turkey (93% lean)
  • 2 tbsp Avocado Oil or Sesame Oil
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh Ginger, grated
  • 1/4 cup (60ml) Low-Sodium Soy Sauce
  • 1 tbsp Rice Vinegar
  • 2 tbsp Honey
  • 1/4 cup (60ml) Water
  • 1 tsp Cornstarch mixed with 1 tsp water
  • 2 cups cooked Steamed Rice (Jasmine or short-grain)
  • 2 cups Broccoli Florets
  • 1 medium Carrot, julienned
  • 2 stalks Green Onions, sliced
  • 1 tbsp Toasted Sesame Seeds

Instructions

  1. Cook rice according to package instructions. Wash, chop broccoli and carrots, and mince garlic and ginger.
  2. In a small bowl, whisk together soy sauce, rice vinegar, honey, water, and the cornstarch slurry. Set aside.
  3. Heat avocado oil in a large skillet over medium-high heat. Add ground turkey, breaking it up with a spatula. Cook for 5-7 minutes until browned and no longer pink. Drain excess liquid if necessary.
  4. Push turkey to the side of the pan. Add minced garlic and grated ginger to the empty space. Sauté for 30 seconds until fragrant, then stir into the turkey.
  5. Pour the teriyaki sauce mixture over the turkey. Stir to coat and simmer for 2-3 minutes until the sauce thickens into a glossy glaze.
  6. Add broccoli and carrots to the pan with a splash of water, cover, and steam for 3-4 minutes until tender-crisp.
  7. Place a scoop of rice in each bowl. Top with the teriyaki turkey and steamed veggies. Drizzle with remaining sauce.
  8. Garnish with sliced green onions and toasted sesame seeds. Serve immediately.

Notes

For a low-carb option, swap rice for cauliflower rice. For a vegan version, use firm tofu and maple syrup. If the sauce is too thick, add a splash of water; if too thin, cook longer. Use low-sodium soy sauce to control saltiness. Fresh ginger and garlic provide better flavor than bottled versions.
