  • 1 egg beaten with 1 tbsp water (for egg wash, optional)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water, honey, and a pinch of sugar. Sprinkle yeast on top and stir gently. Let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl, combine flour and salt. Make a well and pour in the yeast mixture and olive oil. Mix until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth, elastic, and passes the windowpane test.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-2 hours until doubled in size.
  5. Shape the rolls: Punch down dough and divide into 8-10 equal pieces. Roll each into an oval shape and place seam-side down on a lined baking sheet, leaving 2 inches between rolls.
  6. Second rise: Cover rolls loosely and let rise for 30-45 minutes until puffy.
  7. Bake: Preheat oven to 375°F (190°C). Brush tops with egg wash and bake for 15-18 minutes until deep golden brown and hollow-sounding when tapped.
  8. Cool: Transfer to a cooling rack and let cool completely (at least 30 minutes) before storing or slicing.
