- 3 large ripe mangoes (Alphonso or Ataulfo preferred), diced into ½-inch cubes
- 1 medium red onion, finely diced
- 1-inch piece fresh ginger, peeled and finely grated
- 1 small jalapeño pepper, finely minced (seeds removed for mild heat)
- ½ cup apple cider vinegar
- ½ cup light brown sugar
- Juice of 2 limes (freshly squeezed)
- 1 teaspoon cumin seeds
- ½ teaspoon mustard seeds
- ½ teaspoon sea salt (adjust to taste)
- ¼ teaspoon red chili powder or cayenne pepper
Instructions
- Wash mangoes, slice flesh off the pit, and dice into ½-inch cubes. Place in a large bowl.
- Finely dice the red onion. Peel and grate the ginger using a microplane. Mince the jalapeño.
- Heat a heavy-bottomed saucepan over medium heat. Add cumin and mustard seeds, toasting for 30-60 seconds until fragrant and popping. Do not burn.
- Add diced red onion to the pan with the toasted spices. Sauté for 3-4 minutes until translucent and soft.
- Stir in the grated ginger and minced jalapeño. Cook for 1 minute. Add red chili powder or cayenne and cook briefly to bloom the spice.
- Add the diced mangoes, apple cider vinegar, brown sugar, and lime juice to the pan. Stir until sugar begins to dissolve.
- Bring the mixture to a gentle boil, then reduce heat to low. Simmer uncovered for 20-25 minutes, stirring occasionally, until reduced by one-third and jam-like.
- Remove from heat and stir in sea salt. Let cool completely in the pan as it will thicken further.
- Transfer the cooled chutney into sterilized glass jars.
Notes
Ensure mangoes are ripe for natural sweetness and proper thickening. Do not skip the salt as it amplifies fruitiness. The chutney will thicken significantly as it cools. For a smoother texture, blend half before the final simmer. Store in the refrigerator for up to 3 months.
