These 15-minute appetizers combine shredded rotisserie chicken with a sticky, spicy-sweet honey chipotle glaze, served on toasted brioche rolls for a perfect balance of texture and flavor.

- 3 cups shredded rotisserie chicken
- 1/3 cup honey
- 2–3 chipotle peppers in adobo sauce, minced
- 2 tablespoons adobo sauce
- 2 cloves garlic, minced
- 2 tablespoons butter
- 12 small brioche rolls
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Shred the rotisserie chicken by hand, removing skin and bones, and place in a large bowl.
- In a small bowl, whisk together honey, minced chipotle peppers, adobo sauce, garlic, smoked paprika, and black pepper to create the glaze.
- Pour the glaze over the shredded chicken and toss gently to coat evenly. Let sit for one minute.
- Heat a large skillet over medium heat and add the chicken mixture. Cook for 2-3 minutes, stirring occasionally, until warmed through and the glaze thickens slightly. Do not overcook.
- While the chicken warms, slice brioche rolls in half horizontally and brush cut sides with melted butter.
- Toast the buns cut-side down in a separate skillet or on a baking sheet until golden brown.
- Assemble sliders by placing a generous spoonful of warm chicken mixture onto the bottom half of each toasted bun. Add cheese or pickles if desired.
- Serve immediately while warm.
Notes
Toast the buns to prevent sogginess. Honey burns easily, so keep heat at medium. Adjust chipotle peppers based on spice tolerance. Leftover chicken mixture can be stored in the fridge for up to 3 days or frozen for 2 months. Do not freeze assembled sliders.
