  • Extra virgin olive oil (for searing)
  • Kosher salt
  • Freshly cracked black pepper
  • Honey (optional, for extra browning)

Instructions

  1. Preheat oven to 400°F (200°C). Pat pork tenderloins dry with paper towels and trim off any silver skin.
  2. Season the pork generously with salt and pepper on all sides.
  3. Heat olive oil in a cast-iron skillet over medium-high heat. Sear pork for 2-3 minutes on each side until browned.
  4. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, and thyme until smooth.
  5. Reduce heat to low, pour glaze over the pork in the skillet, and let bubble for 30 seconds.
