  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • Avocado oil or olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C). Line a wire rack with parchment paper or prepare the air fryer basket.
  2. Wash jalapenos and slice them in half lengthwise. Scrape out seeds and membranes. Wear gloves to protect skin.
  3. In a medium bowl, mix softened cream cheese, shredded cheddar, crumbled bacon, garlic powder, onion powder, and salt until smooth.
  4. Fill each jalapeno half with the cheese mixture, pressing gently to remove air pockets.
  5. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with extra garlic powder.
  6. Dredge each stuffed jalapeno in flour, dip in egg wash, then press firmly into the panko mixture to coat all sides.
  7. Place bites on the wire rack or air fryer basket. Lightly spray with oil.
  8. Bake for 15-18 minutes or air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
