  • 4 ears fresh corn (approx. 2 cups kernels)
  • 1 large red bell pepper, diced
  • 1/2 small red onion, finely diced
  • 1/2 cup packed fresh cilantro, chopped
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayonnaise
  • 3 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • 1 large avocado, sliced

Instructions

  1. Season chicken with salt, pepper, and cumin. Grill or pan-sear until cooked through (165°F / 74°C). Let rest for 5 minutes, then chop into bite-sized pieces.
  2. Cut kernels off corn cobs. Sauté corn in a skillet over medium-high heat with a little oil for 3-4 minutes until charred. Let cool completely.
  3. Dice red bell pepper and red onion into small, uniform pieces. Chop cilantro finely.
  4. In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth.
  5. In a large mixing bowl, combine chopped chicken, cooled corn, peppers, onions, and cilantro. Pour dressing over top and toss gently to coat. Add crumbled feta cheese.
  6. Divide salad evenly into five glass containers. Store avocado slices separately or add right before eating.

Notes

Ensure all ingredients (especially corn and chicken) are completely cooled before mixing to prevent the dressing from separating. Store avocado separately to prevent browning. This salad is best eaten cold or at room temperature; do not microwave as the dairy-based dressing will separate. The flavors meld and improve over 3-4 days.
