  • 1 cup smooth creamy peanut butter
  • 1 cup powdered sugar
  • 1.5 cups cold heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 1.5 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

Instructions

  1. Crush graham crackers into fine crumbs. In a medium bowl, mix crumbs, melted butter, and granulated sugar until it resembles wet sand.
  2. Press the crust mixture firmly into the bottom of a 9-inch pie dish. Place in the fridge to set while making the filling.
  3. In a large, chilled bowl, whip the cold heavy whipping cream on medium-high speed until stiff peaks form. Set aside.
  4. In a separate large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  5. Add the smooth peanut butter and vanilla extract to the cream cheese mixture and mix until fully combined.
  6. Add about one-third of the whipped cream to the peanut butter mixture and fold in gently with a spatula to lighten the mixture.
  7. Add the remaining whipped cream and continue to fold gently until white streaks disappear. Do not overmix.
  8. Pour the filling into the prepared crust and smooth the top.
  9. Cover tightly with plastic wrap or foil and refrigerate for at least 4 hours, or overnight, until firm.
  10. Slice with a sharp knife dipped in hot water for clean cuts. Serve chilled.

Ensure cream cheese is fully softened to avoid lumps. Heavy whipping cream must be ice cold to whip properly. Avoid natural peanut butter with separated oil as it can make the pie greasy. For best results, chill overnight to allow flavors to meld and texture to set.
