- 2 lbs (900g) 80/20 ground chuck
- 1 large egg
- 1/2 cup (50g) plain dry breadcrumbs
- 1/4 cup (60ml) milk
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp (30g) unsalted butter
- 2 tbsp (15g) all-purpose flour
- 2 cups (480ml) low-sodium beef broth
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine ground beef, egg, breadcrumbs, milk, half of the diced onion, salt, pepper, and thyme. Mix gently until just combined.
- Form the mixture into eight equal patties, about 1/2 inch thick, and place them on the prepared baking sheet.
- Bake patties for 15 minutes.
- While patties bake, melt butter in a medium saucepan over medium heat. Add remaining diced onions and a pinch of salt; cook for 5-7 minutes until soft and translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Sprinkle flour over onions and stir constantly for 1-2 minutes to create a roux.
- Slowly whisk in beef broth and Worcestershire sauce. Simmer for 3-5 minutes until thickened.
- Remove baking sheet from oven. Pour hot gravy evenly over the partially cooked patties.
- Return to oven and bake for another 10-15 minutes until patties reach an internal temperature of 160°F (71°C) and gravy is bubbling.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Do not overmix the meat to avoid tough patties. Ensure onions are fully softened before adding flour to prevent crunchy bits in the gravy. Resting the meat is crucial to retain juices. For gluten-free, use almond flour and cornstarch. For dairy-free, use olive oil and dairy-free milk.
