  • 1.5 lbs ground beef (80/20 lean-to-fat ratio)
  • 2 medium yellow onions, finely diced
  • 1.5 lbs red potatoes, cut into 1/2-inch cubes
  • 4 cloves garlic, minced
  • 1 cup beef broth (low-sodium)
  • 1 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 tbsp butter
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Wash and cube potatoes, dice onions, and mince garlic.
  2. Place a large skillet over medium heat and add butter. Once melted, add diced onions and cook until translucent (3-4 minutes). Add garlic and cook for 30 seconds until fragrant.
  3. Add ground beef to the pan. Break it up and cook until browned and no longer pink (5-7 minutes). Drain excess grease if necessary, but leave some for flavor.
  4. Stir in tomato paste, Worcestershire sauce, dried thyme, dried parsley, salt, and pepper. Cook for 1 minute to toast spices.
  5. Add cubed potatoes to the pan and pour in beef broth. Stir gently to ensure potatoes are submerged halfway in liquid.
  6. Cover the pan tightly with aluminum foil and bake for 20 minutes.
  7. Remove foil and check potatoes with a fork. If not tender, bake uncovered for another 5-10 minutes until liquid reduces to gravy consistency and top is slightly crispy.
  8. Let rest for 5 minutes before serving to allow sauce to thicken.

Notes

Ensure potatoes are cut uniformly for even cooking. Do not stir too much during the final bake to allow edges to crisp. If broth evaporates too quickly, add a splash of water. Letting the casserole rest for 5-10 minutes helps the sauce thicken.
