  • 1 package smoked sausage (Kielbasa, Andouille, or Hungarian), sliced into half-moons
  • 1 medium head green cabbage, core removed and chopped into bite-sized pieces
  • 1 yellow onion, diced
  • 34 cloves garlic, minced
  • 2 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1 tablespoon apple cider vinegar
  • 12 teaspoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt to taste (use sparingly as sausage is salty)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep ingredients: Wash and chop cabbage into 2-inch pieces, dice onion, mince garlic, and slice sausage.
  2. Heat a large skillet or cast-iron pan over medium-high heat. Add butter and let it melt until foamy.
  3. Add sliced sausage to the pan. Cook for about 5 minutes, stirring occasionally, until browned on the edges. Drain excess grease if necessary.
  4. Add diced onions to the pan. Cook for 3-4 minutes until softened and translucent.
  5. Add minced garlic and stir for 30 seconds until fragrant.
  6. Add cabbage to the pan, spreading it out evenly. Let it sit undisturbed for 2-3 minutes to allow the bottom layer to char.
  7. Toss the cabbage with the sausage and onions. Cook for another 5-7 minutes, stirring occasionally, until cabbage is tender-crisp.
  8. In a small bowl, mix brown sugar, Dijon mustard, smoked paprika, and red pepper flakes. Sprinkle this mixture over the cabbage and sausage. Stir to coat evenly and cook for 2 minutes.
  9. Remove pan from heat. Drizzle apple cider vinegar over the top and toss to deglaze the pan.
  10. Taste and adjust seasoning with salt and pepper if needed.
  11. Garnish with fresh parsley and serve immediately.

Notes

Do not overcrowd the pan to ensure the cabbage sears rather than steams. Let the cabbage sit undisturbed for a few minutes to develop a nice char. The dish stores well in the fridge for up to 4 days but does not freeze well as the cabbage may become mushy.
