A reliable, slow-cooked chuck roast with root vegetables and a rich gravy, designed for busy weeknights and meal prepping with minimal prep time.

- 3–4 lbs boneless chuck roast
- 2 lbs waxy potatoes (Yukon Gold or red), chopped into large chunks
- 1 lb carrots, peeled and chopped into large chunks
- 1 large yellow onion, chopped into wedges
- 2 cups low-sodium beef broth
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- Dried thyme and rosemary
- 2 bay leaves
- 2 tbsp butter
- 2 tbsp flour (or cornstarch for gluten-free)
Instructions
- Pat the chuck roast dry and season generously with salt, pepper, dried thyme, and rosemary on all sides.
- Place chopped potatoes and carrots at the bottom of the 6-quart crockpot, then layer the onion on top.
- Set the seasoned chuck roast on top of the vegetables.
- Scatter minced garlic and bay leaves over the meat, then pour in the beef broth until it comes halfway up the sides of the meat.
- Cover and cook on LOW for 8 hours (or HIGH for 4-5 hours) until the meat shreds easily with a fork.
- Remove the meat and vegetables to a plate and cover the meat with foil to keep warm.
- Whisk butter and flour together to make a roux, then whisk into the hot liquid in the crockpot.
- Cook on HIGH for 15-20 minutes, uncovered, stirring occasionally, until the gravy thickens.
- Shred the beef with two forks or chop into chunks.
- Return the meat and vegetables to the pot, pour the thickened gravy over everything, and toss gently to coat before serving.
Notes
Do not cut the meat into small cubes as it will dry out. Vegetables release water, so avoid adding too much broth initially. Let the meat rest for 10 minutes after removing from the pot before shredding to retain juices. For gluten-free, use cornstarch slurry. For dairy-free, use olive oil instead of butter.
