- 3 cups cooked jasmine rice (cold, day-old)
- 1 to 1.5 cups diced fresh pineapple
- 2 large eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sesame oil
- 3 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 cup frozen peas and carrots
- 3 stalks green onions, chopped
- 2 tablespoons vegetable oil
- 1/2 teaspoon white pepper
- Red pepper flakes (optional, for heat)
Instructions
- Ensure jasmine rice is cold. If warm, spread on a plate to cool for 2 minutes.
- Heat a large skillet or wok over medium-high heat. Add vegetable oil and heat until shimmering.
- Pour in beaten eggs. Scramble gently until just cooked but still soft, then remove to a plate.
- Add a little more oil if needed. Sauté minced garlic and grated ginger for 30 seconds until fragrant.
- Add frozen peas and carrots. Cook for 2-3 minutes until heated through and slightly charred.
- Toss in diced pineapple. Cook for 1-2 minutes until edges caramelize slightly.
- Add cold rice to the pan. Break up clumps, press down to create a crust for 30 seconds, then toss. Repeat for 2-3 minutes.
- Drizzle soy sauce and dark soy sauce over the rice. Sprinkle with white pepper. Toss until evenly coated.
- Return scrambled eggs to the pan. Add sesame oil and chopped green onions. Toss to combine.
- Remove from heat and serve immediately.
Notes
Use cold, day-old rice to prevent mushiness. If using fresh rice, spread it on a baking sheet and refrigerate for an hour. For best results, use fresh pineapple rather than canned to avoid excess moisture. Add soy sauce around the edges of the pan to allow it to sizzle and caramelize.
