- 4 thick-cut, bone-in pork chops (1 to 1.5 inches thick)
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 2 tablespoons butter (optional, for basting)
Instructions
- Preheat oven to 375°F (190°C).
- Remove pork chops from the refrigerator and let them sit at room temperature for 15-20 minutes.
- Pat the pork chops dry thoroughly with paper towels to ensure browning.
- In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme.
- Drizzle olive oil over the chops and rub it into the meat on all sides.
- Generously sprinkle the spice rub over both sides of the chops, pressing it into the meat.
- Place the chops on a baking sheet lined with a wire rack.
- Bake for 20-25 minutes, or until the internal temperature reaches 140°F (60°C).
- Optional: In the last few minutes, baste with melted butter for added richness.
- Remove from oven and tent loosely with foil. Let rest for at least 5 minutes before serving.
Notes
For best results, use a meat thermometer to check for doneness. Pull the chops at 140°F as the temperature will rise 5 degrees during resting. Do not overcrowd the pan to allow for proper air circulation and browning. If you don’t have a wire rack, place chops directly on the sheet and flip halfway through cooking.
