  • 1/2 cup Dijon mustard
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 cup panko breadcrumbs
  • 2 tbsp extra virgin olive oil
  • 1 tbsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 tbsp butter (optional, for roasting pan)

Instructions

  1. Preheat oven to 425°F (220°C). Remove lamb from refrigerator 30 minutes before cooking to reach room temperature.
  2. Pat the lamb dry with paper towels to ensure a good crust.
  3. Season the lamb generously on all sides with kosher salt and black pepper.
  4. Spread a thin, even layer of Dijon mustard over the top surface and sides of the lamb.
  5. In a small bowl, mix minced garlic, chopped rosemary, chopped thyme, panko breadcrumbs, and olive oil until damp and clumping.
  6. Press the herb mixture firmly onto the mustard-coated side of the lamb, ensuring it sticks well.
  7. Place the lamb crust-side up in a roasting pan or on a baking rack.
  8. Roast for 20-25 minutes, or until internal temperature reaches 125°F-130°F for medium-rare (or 135°F-140°F for medium).
  9. Remove from oven and tent loosely with aluminum foil. Let rest for at least 10 minutes.
  10. Slice between the bones into individual chops and serve immediately.

Notes

Let the lamb rest for at least 10 minutes after cooking to allow juices to redistribute. The internal temperature will rise by about 5 degrees during resting. If the crust browns too quickly, tent loosely with foil for the last few minutes of cooking. For a gluten-free version, substitute panko with almond flour or gluten-free breadcrumbs.
