Ingredients

  • 2 large ripe pineapples, peeled, cored, and chopped into chunks
  • 2 large English cucumbers, washed and chopped
  • 1/2 cup fresh lime juice (about 3–4 limes)
  • 1/4 cup honey or agave nectar (optional, depending on pineapple sweetness)
  • 6–8 cups cold filtered water
  • Ice cubes, for serving
  • Fresh mint leaves, for garnish

Instructions

  1. Peel the pineapples, remove the core, and cut into chunks that fit your blender. Wash and chop the cucumbers into rough pieces.
  2. Add pineapple chunks, cucumber pieces, lime juice, and honey (if using) to a blender. Blend on low, then increase to high for 1-2 minutes until completely smooth.
  3. Place a fine-mesh strainer lined with cheesecloth or a nut milk bag over a large bowl or pitcher. Pour the blended mixture into the strainer.
  4. Press the liquid through the strainer using a spoon or by squeezing the bag to remove all pulp and fiber, leaving a clear juice.
  5. Add cold water to the concentrate, starting with 6 cups. Taste and add more water if needed to reach a light, refreshing consistency.
  6. Stir well to combine. Pour into serving pitchers or meal prep bottles. Chill in the refrigerator for up to 5 days.
  7. Serve over ice and garnish with fresh mint leaves.

Notes

Chill fruits before blending for a colder drink. Taste the pineapple first; if it is very sweet, you may not need added honey. A pinch of salt can enhance the tropical flavors. For meal prep, make the drink 1-2 days ahead to allow flavors to meld. Do not freeze, as texture changes upon thawing.
