Description
A quick, crunchy, and satisfying low-calorie snack made by tossing thinly sliced cucumbers with dry ranch seasoning. This raw recipe offers the taste of chips without the guilt, ready in just five minutes.
Ingredients
- English Cucumbers (or Persian/Kirby cucumbers, peeled if preferred)
- Dry Ranch Seasoning Mix (1-2 tablespoons per cucumber)
- Extra Virgin Olive Oil (1-2 teaspoons, optional)
- Sea Salt (pinch, optional)
- Black Pepper (freshly cracked, optional)
- Fresh Chives (for garnish, optional)
- Feta Cheese (crumbled, optional)
Instructions
- Wash cucumbers under cold water and scrub gently to remove dirt.
- Pat cucumbers completely dry with paper towels to ensure seasoning adheres.
- Trim off both ends of the cucumbers.
- Slice cucumbers into thin rounds, approximately 1/8 inch thick.
- Lay slices on paper towels and let sit for 5 minutes to draw out excess moisture, then pat dry again.
- Place dried cucumber slices in a large mixing bowl.
- Drizzle with olive oil (if using) and sprinkle with dry ranch seasoning and black pepper.
- Toss gently with hands or a spoon until slices are evenly coated.
- Transfer to a serving plate and chill in the fridge for 15 minutes for enhanced crunch.
- Garnish with fresh chives or feta cheese if desired and serve immediately.
Notes
Do not skip the drying step; wet cucumbers will result in soggy seasoning. Use fresh ranch seasoning for best flavor. These chips are best served immediately as they soften over time. If prepping ahead, keep cucumbers and seasoning separate until serving. Do not freeze.
