Instructions

  1. Break dark chocolate into small pieces and melt in a heatproof bowl over a saucepan of barely simmering water (double boiler method). Stir until smooth, remove from heat, and let cool slightly for 5 minutes.
  2. In a large cold bowl, pour cold heavy cream. Add vanilla extract and half of the sweetener. Whip on medium-high speed until stiff peaks form (about 2-4 minutes).
  3. Blend raspberries, lemon juice, and remaining sweetener in a blender until smooth. Strain through a sieve if a seedless texture is desired.
  4. Fold one-third of the whipped cream into the melted chocolate to lighten the mixture.
  5. Gently fold in the remaining whipped cream until no white streaks remain, creating a uniform, airy mixture.
  6. Pour half the chocolate mousse into serving glasses or a bowl. Add dollops of raspberry puree, then pour remaining mousse over the top.
  7. Swirl a knife through the layers to create a marble effect without over-mixing.
  8. Cover and refrigerate for at least 4 hours, or ideally overnight, until set.

Notes

Ensure the cream is ice-cold and the mixing bowl is chilled for best whipping results. Do not over-whip the cream or it will turn to butter. If the chocolate hardens before mixing, gently warm it slightly. The dessert tastes better after sitting in the fridge for 24 hours as flavors meld. It can be stored in the refrigerator for up to 5 days or frozen for up to 2 months.
