Description
A deeply flavorful, nutrient-dense beef bone marrow soup made in a slow cooker. This recipe requires only 10 minutes of active prep time and yields a gelatinous, rich broth that supports joint health and gut healing.

- 2–3 lbs Beef Marrow Bones (beef femur bones with marrow intact)
- 1 lb Beef Knuckle or Joint Bones (optional, for collagen)
- 8–10 cups Filtered Water
- 2 tablespoons Apple Cider Vinegar
- 2 large Yellow Onions (chopped in half, skins on)
- 3 large Carrots (peeled and chopped into large chunks)
- 3–4 stalks Celery (chopped into large pieces)
- 1 head Garlic (roasted whole)
- 1 bunch Fresh Parsley (stems for cooking, leaves for garnish)
- 4–5 sprigs Fresh Thyme
- 2 Bay Leaves
- 1–2 teaspoons Sea Salt (adjust to taste)
- Cracked Black Pepper (to taste)
Instructions
- Preheat oven to 400°F (200°C). Place beef marrow bones and knuckle bones on a large baking sheet and roast for 20-25 minutes until browned. Roast the whole head of garlic on the same tray for the last 15 minutes. Let cool slightly.
- While bones roast, chop onions, carrots, and celery into large chunks. Squeeze soft garlic cloves from their skins.
- Transfer roasted bones and vegetables into a 6-quart slow cooker. Add apple cider vinegar and enough water to cover ingredients by an inch. Add bay leaves, thyme sprigs, and parsley stems.
- Cover and cook on low for 8 to 10 hours.
- Remove bones and large vegetables. Skim excess fat from the surface. Strain the liquid through a fine-mesh sieve into a large bowl, discarding solids.
- Taste and season with salt and black pepper. Stir in fresh parsley leaves. Serve hot.
Notes
Roasting the bones is highly recommended for deep flavor. The broth will gel when cooled due to high collagen content. Skim fat for a lighter soup. Can be frozen for up to 3 months. If using raw bones, flavor will be milder.
