These shredded chicken Caesar wraps are the ultimate meal prep solution, featuring tender, garlic-butter-braised chicken thighs paired with crisp romaine, parmesan, and Caesar dressing. Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp unsalted butter
- 3–4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- 1 head romaine lettuce, washed and dried thoroughly
- 1 cup shredded parmesan cheese
- 1/2 cup Caesar dressing (plus more for serving)
- 1 cup multigrain croutons
- 6–8 large flour tortillas (burrito-sized)
- 1 large lemon, cut into wedges
Instructions
- Pat chicken thighs dry and season lightly with salt and pepper.
- Heat butter in a large skillet over medium heat. Add chicken thighs in a single layer and cook for 3-4 minutes per side until golden brown.
- Push chicken to the sides and add minced garlic to the center; cook for 30 seconds until fragrant, then stir into the chicken.
- Pour in chicken broth until it comes halfway up the chicken. Reduce heat to low, cover, and simmer for 15-20 minutes until chicken reaches 165°F and is tender.
- Remove chicken from pan and let cool for 5 minutes. Shred meat using two forks, discarding excess fat or skin.
- Return shredded chicken to the pan and toss with half the Caesar dressing and half the parmesan cheese. Set aside to cool completely.
- Chop the dried romaine lettuce into bite-sized pieces.
- Lay out tortillas and spoon seasoned chicken down the center. Top with romaine, drizzle with remaining dressing, and sprinkle with remaining parmesan.
- Fold sides of tortilla over filling and roll tightly from the bottom up. Wrap in plastic wrap or foil to hold shape.
- Store in airtight containers. Keep croutons in a separate container until ready to eat.

Ensure lettuce is completely dry to prevent soggy wraps. Cool chicken completely before assembling to avoid steaming the tortilla. Store croutons separately to maintain crunch. Wraps are best eaten cold or at room temperature, but can be microwaved for 30-60 seconds if preferred warm. Do not freeze as lettuce and tortillas do not hold up well.
