Ingredients

  • 1 cup uncooked jasmine rice
  • 1.5 cups water
  • 1 lb large shrimp, peeled and deveined
  • 1 large ripe mango, diced
  • 2 ripe avocados, sliced
  • 2 large limes (juice and zest)
  • 1 small bunch fresh cilantro, chopped
  • 1/2 red onion, thinly sliced
  • 1 tbsp olive oil or avocado oil (for shrimp)
  • 1 tbsp olive oil (for dressing)
  • Sea salt and black pepper, to taste
  • Pinch of chili flakes (optional)

Instructions

  1. Rinse 1 cup of jasmine rice under cold water until water runs clear. Combine with 1.5 cups water in a saucepan.
  2. Bring rice to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes. Fluff with a fork.
  3. While rice cooks, pat shrimp dry with paper towels. Dice mango, slice avocado, slice red onion, and chop cilantro.
  4. In a small bowl, whisk together lime juice, 1 tbsp olive oil, salt, and chili flakes to make the dressing.
  5. Season shrimp with salt and black pepper.
  6. Heat a skillet over medium-high heat with 1 tbsp oil. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove from heat.
  7. Assemble bowls by placing warm rice at the bottom. Top with shrimp, mango, avocado, and red onion.
  8. Drizzle with lime dressing and garnish with cilantro.

Notes

Pat shrimp dry before cooking to ensure a good sear. Keep avocado and mango cold while shrimp are warm for temperature contrast. Store components separately in the fridge to maintain texture. Do not freeze the assembled bowl as avocado and rice do not freeze well.
