  • Boneless, skinless chicken thighs
  • Baby potatoes (red or Yukon Gold), washed and halved if large
  • 1 packet dry ranch seasoning mix
  • 1 cup low-sodium chicken broth
  • Heavy cream (or half-and-half)
  • Shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • Freshly cracked black pepper
  • Green onions, chopped (for garnish)
  • Salt (optional, for seasoning chicken)

Instructions

  1. Wash baby potatoes thoroughly. If large, cut them in half. Place them at the bottom of the slow cooker to create a bed.
  2. Pat chicken thighs dry with paper towels. Season lightly with salt and pepper on both sides. Place them on top of the potatoes.
  3. Sprinkle the entire packet of dry ranch seasoning over the chicken and potatoes. Add garlic powder and black pepper. Toss gently to coat ingredients evenly.
  4. Mix chicken broth and heavy cream in a measuring cup. Pour this mixture over the chicken and potatoes. The liquid should come about halfway up the chicken.
  5. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and potatoes are soft.
  6. In the last 30 minutes of cooking, stir in the shredded cheddar cheese. Cover and let it melt into the sauce, stirring gently to combine.
  7. Taste and adjust seasoning if needed. Garnish with chopped green onions before serving.
  8. Let the dish rest for 10 minutes after cooking to allow the sauce to thicken slightly.
