  • 1 packet Dry Onion Soup Mix
  • 1 tsp Garlic Powder

  • 2 tbsp Oil for Searing (Avocado or Vegetable)
  • 1 tsp Salt

Instructions

  1. Pat the chuck roast dry with paper towels and season all sides generously with salt and black pepper. Let it sit at room temperature for 15 minutes.
  2. Heat oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes per side until a deep brown crust forms. Transfer the seared roast to a 6-quart slow cooker.
  3. In the same skillet, sauté the sliced onions for 5 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant. Scrape up brown bits from the pan.
  4. Stir in the tomato paste, Worcestershire sauce, and garlic powder. Cook for 1 minute, then pour in the beef broth and dry onion soup mix. Whisk until smooth.
  5. Pour the gravy mixture over the roast in the slow cooker. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until the meat shreds easily with a fork.
