  • 34 lbs Chuck Roast
  • 4 large Yellow Onions, thinly sliced
  • 2 cups Beef Broth (low-sodium)
  • 2 tbsp Worcestershire Sauce
  • 1/2 cup Red Wine (optional, or extra broth + balsamic vinegar)
  • 4 cloves Garlic, minced
  • 1 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 2 Bay Leaves
  • Salt and Black Pepper to taste
  • 1 tbsp Butter or Olive Oil

Instructions

  1. Pat the chuck roast dry and season generously with salt and black pepper.
  2. Heat butter or olive oil in a large skillet over medium-high heat. Sear the roast on all sides for 2-3 minutes per side until a deep brown crust forms. Remove and set aside.
  3. In the same skillet, sauté the sliced onions over medium heat for about 10 minutes until softened and translucent.
  4. Add minced garlic, tomato paste, and dried thyme to the onions. Stir constantly for one minute until fragrant.
  5. Transfer the onion mixture to the bottom of a 6-quart slow cooker. Place the seared roast on top.
  6. Pour beef broth and red wine around the roast. Add Worcestershire sauce and bay leaves. Do not stir.
  7. Cover and cook on Low for 8 hours (or High for 4-5 hours) until the meat is fork-tender.
  8. Remove the roast and let it rest for 10 minutes. Skim excess fat from the sauce if desired.
  9. Shred the meat with two forks and return it to the slow cooker, mixing with the sauce and onions.
  10. Let cool slightly before portioning into containers for meal prep.

Notes

Ensure Worcestershire sauce and broth are certified gluten-free if needed. If the sauce is too thin, mix a teaspoon of cornstarch with water and stir in during the last hour of cooking. Do not lift the lid frequently during cooking to maintain heat.
