- 6–8 lb Pork Shoulder (Boston Butt)
- 1 large Yellow Onion, sliced into thin rings
- 4–5 Garlic Cloves, smashed
- 1/2 cup Unsalted Butter, softened
- 1/2 cup Raw Honey
- 2 tbsp Soy Sauce
- 1 tbsp Apple Cider Vinegar
- 1 tsp Worcestershire Sauce
- 2 tbsp Freshly Cracked Black Pepper
- 1 tbsp Smoked Paprika
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1/2 tsp Cayenne Pepper
- 2 tbsp Kosher Salt
- Apple, Cherry, or Hickory Wood Chips
Instructions
- Remove pork shoulder from fridge and let sit at room temperature for 30 minutes. Pat dry with paper towels.
- In a small bowl, mix black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, and salt to create the rub.
- Generously apply the rub to all sides of the pork shoulder, massaging it in thoroughly.
- Stuff the onion rings and smashed garlic cloves inside the natural pocket of the pork shoulder.
- Preheat smoker to 225°F (107°C) and add wood chips.
- Place pork on smoker grate, fat side up, and smoke for 4-5 hours without opening the lid frequently.
- When internal temperature stalls around 150-160°F, wrap pork tightly in butcher paper or aluminum foil.
- Return wrapped pork to smoker and cook until internal temperature reaches 203°F (95°C), approximately 2-3 more hours.
- While pork finishes, melt butter in a saucepan over low heat. Stir in honey, soy sauce, apple cider vinegar, and Worcestershire sauce. Simmer for 5 minutes to thicken.
- Remove pork from smoker and rest in foil, wrapped in a towel, for at least 1 hour.
- Unwrap pork, brush generously with honey butter glaze, and return to smoker unwrapped for 30-45 minutes to caramelize.
- Remove from smoker and rest for another 15-20 minutes before shredding or slicing.
Notes
The pork is done when it reaches 203°F and feels tender like soft butter. Resting is crucial for juicy meat. If the glaze is too thin, simmer longer; if too thick, add a splash of water. Leftovers can be frozen for up to 3 months.
