A meal-prep-friendly stir fry featuring tender beef and crisp vegetables that reheats perfectly, maintaining texture and flavor for up to four days.

- 1 lb flank steak or sirloin, sliced very thin against the grain
- 1 tbsp cornstarch
- 1 tbsp soy sauce (for marinade)
- 1 tsp sesame oil
- 2 cups broccoli florets
- 1 red bell pepper, sliced into strips
- 1 cup snap peas or snow peas
- 1 medium carrot, julienned
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/3 cup low-sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp chili flakes (optional)
- 1/2 cup beef broth
- Cooking oil (for searing)
Instructions
- Slice beef against the grain and marinate with cornstarch, 1 tbsp soy sauce, and sesame oil for 10 minutes.
- Whisk together 1/3 cup soy sauce, oyster sauce, rice vinegar, brown sugar, chili flakes, and beef broth in a separate bowl.
- Blanch broccoli florets in boiling salted water for 2 minutes, then drain and rinse with cold water.
- Heat a wok or skillet over high heat with oil. Sear beef in a single layer for 1-2 minutes per side until browned but not fully cooked. Remove and set aside.
- Add more oil to the pan. Stir-fry carrots and bell peppers for 2 minutes.
- Add snap peas and blanched broccoli; cook for another 2 minutes until tender-crisp.
- Add garlic and ginger in the last 30 seconds.
- Return beef to the pan, pour in sauce mixture, and toss until coated and glossy (about 1 minute).
- Cool completely before portioning into containers to prevent condensation.
Notes
Slice beef against the grain for tenderness. Blanch broccoli to maintain crunch during reheating. Do not overcrowd the pan when searing beef. Cool food completely before refrigerating to prevent sogginess. This recipe does not freeze well.
